Chef's Corner - Turkish Kisir

A staple dish in the Turkish culture is the delicious Kisir. Made from bulghur wheat, this delicious salad has a hint of spice and is the perfect side dish when teamed with a lettuce cup. Enjoy it as a side salad with dinner an afternoon snack with friends.


340g (2 cups) burghul
2 teaspoons salt
1L (4 cups) boiling water
60ml (1/4 cup) olive oil
60ml (1/4 cup) fresh lemon juice
2 tablespoons red pepper paste
2 ripe tomatoes, coarsely chopped
1 brown onion, fine dice
1 bunch green shallots, sliced
1 bunch fresh parsley, chopped


  1. Place the burghul and salt in a large heatproof bowl. Pour over the boiling water and cover with plastic wrap. Set aside for 30 minutes or until burghul doubles in size and liquid is absorbed.
  2. Combine oil and lemon juice in a jug. Pour over burghul mixture and stir until combined. Add red pepper paste and stir until combined. Add tomato, onion, shallots and parsley. Gently stir until combined. Taste and season with salt and pepper.

To serve, spoon salad among iceberg lettuce leaves and roll to enclose.
