Chef's Corner - Christmas Pudding

We are huge cherry lovers in the HostCo office which makes us happy that they are finally back in season. Not just a sweet delight, cherries are also low in calories, and a rich source of nutrients, vitamins, and minerals. Thanks to an old Scottish pastry chef, follow this recipe to make a delicious cherry Christmas pudding and get into the Christmas spirit this festive season.

What you will need

100g pitted cherries        
250g bread crumbs          
115g brown sugar          
5g mixed spice                
1/3 lemon zested             
Pinch of salt                     
35ml brandy                     
35ml sherry                     
650g dried diced fruit
65g butter 
1.5 eggs
4g ginger
1/3 orange zested
70 ml water
35 ml rum
70 ml beer

Heat the water and alcohol, pour over fruit.  Allow to sit for 5 or 6 days in the fridge.

Cream butter and sugar. Add eggs, then fruit and breadcrumbs. 

Press mixture into pudding basin and steam for 4 hours.

Enjoy your delicious Christmas pudding.
